Foodie Fave – Avocado & Poachie Tartine

In case you’re lacking inspiration in the snacking department, one of my latest afternoon nosh faves is also one of the simplest.

What You’ll Need:

  • 2 slices of gluten-free whole grain bread
  • Vegenaise
  • 1 avocado
  • 2 organic, free range eggs
  • Salt & Pepper

To Do:

  • Toast that bread to golden perfection
  • Slather on the Vegenaise
  • Mash avocado in a bowl with a fork
  • Bring small pot of water to a boil, and add white wine vinegar (helps keep the egg together while cooking) and sea salt
  • Crack egg in small shallow ramekin, and when you see the water bubble, shut burner off
  • Create a whirlpool effect with a wooden spoon, and gently pour the egg into the centre of the cyclone
  • Let cook for 4 minutes (repeat steps with each egg, bringing water back to a boil each time)
  • Sprinkle with salt and pepper
  • Pig out!
